Oh your idea sounds great. I've always wanted to paint a mural. Probably paint with a water based paint. This way it is a lot easier to paint over the ';errors'; and I guess you know what I mean by this since painting is all about correcting yourself because you can't erase.

Acrylic is plastic material, latex is rubber material, both elastic and reliable. Will not chip off.and in the process, you can also wash off any mistakes with water and cloth. I am guessing latex would be cheaper in large quantities.Try a sample on some scrap piece of drywall first.
You should buy small amounts of the standard interior wall paint.

Definitely acrylic but you want to prime your wall with Kilz first. It protects against moisture, mold, mildew and helps keep the acrylic from coming off.
Acrylic is fine if that is what you want to use. It will only come off if the surface or paint underneath it is unstable.
You can use acrylics for a mural. It will be fine going on, maybe a bit messy when you decide to change it
